I have never thought that I would even need one. Ever. Not sure why I would need one at all.

I've heard the cast iron grates gives those nice sear marks, are easier to clean up (meat doesn't stick) and that they can make your meat taste better. But what do I know, I'm the one asking questions around here. :cool:

Okay. You sear to get more flavor and "crisp" "crust" to the meat.

You can do this on the egg. Here's how.

Keep the top and bottom vents wide open until you reach 600 degrees, and with them still open, cook the strip steak for 2 minutes then flip. Cook for another 2 minutes.

Take off grill.

Lower heat to desired temp by closing vents.

Now cook steak at 45 degree angle from where had it placed it to sear for the grill marks.

Don't know that you need anything else to accomplish this - oh! Coat your grill with peanut oil or olive oil to prevent sticking.

At that high of a temperature, you probably shouldn't need the oil. A hard sear should separate the meat from the grill.

So I finally got my Egg yesterday. It was a pain in the ass fitting that thing in the back of my hatchback (got an XL). Eggfest was awesome. Lots of good food and drink, plenty of nice people as well. After months of research and money invested into this thing I am just glad to have it and be part of the family. Helluva job just wheeling the damn thing over the grass to my back lawn and then getting those freakin' Eggmates on, but it was all worth it. Gonna post pics from my first cookout in the the 'Food and Drink' Forum. Thanks to all who gave input and helped answer various questions, especially Joker, Jack & Dawgball.

Makin' wings on th BGE tonight. Any suggestions or tips? Temp? :shrug:
I've only ever pan fried or made them in the oven before.

I haven't ever grilled wings so I don't know.

Although remember - the more you can keep the lid closed, the better off you are.

Also, Mesquite wood is okay, but apple wood is the best should you smoke while you grill.

Wings @ 300 direct until done the way you like them. You can pile them up and flip them now and then.

If you're in no hurry lower the temp.

Have a flank steak marinating in the fridge for fajitas later. Has anyone cooked one on the egg? Looking for suggestions on temp, cooking time, direct or indirect. :shrug:
